Chilopitaki (Quadretti) belongs to small pasta category. It has square shape and is the most "famous" and oldest pasta in the Peloponnese. The dough is created from excellent quality mixture of hard and soft flours, full-fat cow's milk, eggs and salt. It can be cooked as a white or colored soup, to accompany red or white meat in the oven and in the hull or as pilaf. Traditionally, Chilopitaki accompany braised traditional rooster.
